Chicken with Cherry Tomatoes and Ginger – The Urban Peasant

I love recipes like this.  It is super easy, colorful, fresh and packed full of flavor.  Some of the items in the recipe you may not have around the kitchen.  I would have to go and buy some ginger and cherry tomatoes.  He starts off by searing the chicken breast in a pan and simply adds the rest of the ingredients in turn to the pan.  This recipe is that it only requires one pan and a lid!  That was one of James’ specialties.  He even released a book called One-Pot Wonders: James Barber’s Recipes for Land and Sea.    James Barber is a lot of fun to watch.  He keeps things light and quirky.  His recipes are always simple and easy to prepare.  He wanted to make cooking easy for everyone.  He also likes to talk to his appliances.  My only criticism is regarding the graphics.  Sometimes they get a little in the way.  His show “The Urban Peasant” ran for ten years on CBS.   Reruns of his show can still be seen on the Ion Life channel.

Chicken with Cherry Tomatoes and Ginger Recipe

  • 2 Tbsp oil
  • 2 skinless, boneless chicken breasts, cubed
  • 1 inch fresh ginger, chopped or grated
  • 2 cloves garlic
  • 1 pint (about 15) cherry tomatoes
  • 1/4 cup water
  • 1 cup frozen peas, still frozen salt
  • pepper

Heat a fry pan over medium-high heat, add the oil. Add the chicken, ginger and garlic to the fry pan, and cook for 2-3 minutes, until the chicken starts to change colour. Add the cherry tomatoes, water and peas. Cover and cook for another 4 minutes, or until the peas are done. Season with salt and pepper and serve.
